I am not even exaggerating. This is the best peanut butter frosting I’ve ever had. I’m not big on sweet frostings, so I’ve cut WAY back on the amount of sugar in this recipe (most frostings call for about four times as much powdered sugar!) and added my own little twist.
The Best Peanut Butter Frosting
Frosts 12 regular cupcakes
1 cup peanut butter
1 cup butter, softened
1 cup confectioner’s sugar
4 oz. whipped cream cheese
1/4 cup milk
1 tsp vanilla
Beat butter until fluffy, then add peanut butter and beat until well combined. Add the sugar, milk and vanilla, beat until everything is mixed together, then add the whipped cream cheese. Beat the frosting until it is light and fluffy.
Taste the finished product, and if you want something sweeter, add more powdered sugar about 1/4 cup at a time … but I’m telling you, this is pretty much perfect the way it is! If you can imagine peanut butter pie filling in icing form, this is it. I cut the tip off of a sandwich bag and frosted chocolate sour cream cupcakes (recipe from Ming Makes Cupcakes — #22), and it was OUTSTANDING!
